I ran into a small issue. Once you hit HR3 and you start to capture monsters, going into capture mode locks you where you cant defeat the enemy and can only capture but I dont have 5 stamina yet so I cant use the capture card. I have so much hp that the enemy takes forever to kill me because there seems to be no way to leave the battle. I dont have a save thats worth loading without losing alot of time so im forced to end turn until the enemy can kill me.

Is this all of the Lust Hunter games in one or is each Lust Hunter game (Lesbian, gay, brothel etc.) an entirely different game?

It is'n issue. Upgrade you max stamina in character menu (click to top-left icon when you outside a battle)
Get drunk. Randomizing the stamina requirement caps the possible cost to your maximum
